If you are able to make any adjustments the color of those symbols will be white (if it’s greyed out then you don’t have the option with that font). The first one is the Standard Ligatures, then Contextual Alternates, Discretionary Ligatures, Swash, Old Style, Stylistic Alternates, Tilting Alternates, Ordinals, and Fractions. Below that are some options you can click through for adjusting the swashes. Then at the bottom are some single character symbols (T T TT, etc). You’ll see the name of the font, options for leading, tracking, kerning, etc. Open your Character palette from the Window pull down menu. For this font (and others), you’ll want to type something out, then highlight the letter you’d like to change. I don’t know if this will help or if I’m even explaining everything correctly but here goes!My understanding of fonts in PS is that if it’s an Open Type font then you can play around with the different swash options a little more.
